  1. In a mixing bowl combine butter with sugar by gradually adding sugar to combine
  2. Beat sugar-butter mixture until light and fluffy
  3. Beat in egg and almond extract
  4. Gradually fold in flour
  5. Chill dough in refrigerator to ease handling
  6. Roll out dough on lightly floured surface to 1/8 inch thickness
  7. Cut dough into desired shapes. Be sure to flour the cookie cutters.
  8. Place on baking sheets and bake 8-12 minutes

Yields 7-8 dozen cookies
